Zucchini Bread

3 eggs

2 1/4 cups Sugar

1 cup vegetable oil

3 teasp. Vanilla

3 cups flour

3 teasp. Cinnamon

1/4 teasp. Baking powder .

1 teasp. Salt

1 teasp. Baking Soda

2 cups Zucchini (uncooked and ground)

1 cup chopped nuts

Cream eggs and sugar.

Beat in oil and vanilla.

Sift dry ingredients together.

Add Zucchini and nuts.

Spoon into greased and floured loaf pans.

Bake at 350 degrees about 1 hour.

(Makes 2 loaf pans, or several small ones)
