Garlicky Green Beans

1 lb. green beans, trimmed

1 small onion, chopped (1/3 c)

2 t. minced garlic ( 2 large cloves)

2 t. oil

1 T. flour

1 t. paprika

1 16 oz. can whole tomatoes, drained, or fresh tomatoes chopped

Steam the green beans for 5 minutes. Then quickly chill them under cold water. Set aside.

In a medium saucepan, sauté the onion and garlic in the oil for about 5 minutes. Stir in the flour and paprika, cook the mixture for 1 minute, and then stir in the reserved liquid from the tomatoes. Cook the mixture, stirring it, until it is slightly thickened.

Add the tomatoes and the reserved green beans, mixing the ingredients well. Cook the mixture, stirring it, over medium heat for about 2 minutes or until it is heated through and the bean are tender-crisp.
