Benedictine Spread

1 large cucumber from neighbors garden

1 medium onion( Bardstown Rd Farmers’ Market)

3-8 oz. cream cheese

1 t. salt

1 t. mayonnaise

Green food coloring is you wish

Dash of Tabasco sauce ( can add more to taste)

Seed and chop cucumber finely. I use an electric chopper. Chop medium onion. Add to softened cream cheese in food processor. Then add other ingredients and blend until smooth. Refrigerate. Serve as spread for sandwiches or crackers
