Benedictine Spread

1 Large cucumber (from neighbor's garden)

1 medium onion (Bardstown Rd. Farmers Market)

3 -8oz. cream cheeses

1t. salt

1t. mayonnaise

Green food coloring if you wish

Dash of Tabasco sauce (can add more to taste)

Seed and chop cucumber finely. I use an electric chopper. Chop medium onion. Add to softened cream cheese in food processor. Then add other ingredients and blend until smooth. Refrigerate. Serve as spread for sandwiches or crackers.
