Quinoa, Black Bean, and Veggie Salad

1 CUP RED QUINOA (PRE WASHED)

1 CAN OR 2 CUPS VEGGIE BROTH

1 MED GREEN PEPPER CHOPPED (www.familyfarmproject.com)

1 MED CUCUMBER CHOPPPED (www.familyfarmproject.com)

1 MED ONION CHOPPED (www.familyfarmproject.com)

2 TOMATOES CHOPPED (www.familyfarmproject.com)

1 MED CARROT GRATED (bardstown road farmer’s market)

1 MED ORANGE PEPPER

1 CAN BLACK BEANS (DRAINED AND RINSED)

1/3 CUP FRESH CILANTRO CHOPPED

1/3 CUP OLIVE OIL

3 TBL LIME JUICE (1 LIME)

ZEST FROM LIME

1/2 TSP SALT

1 GARLIC CLOVE

-PREPARE THE QUINOA WITH THE VEGGIE BROTH ACCORDING TO DIRECTIONS ON PACKAGE, LET COOL IN FRIDGE

-TOSS ALL THE VEGGIES, BLACK BEANS, AND QUINOA

-PUT LIME JUICE, ZEST, SALT, OLIVE OIL, CILANTRO TOGETHER AND WHISK

-PUT LIME JUICE MIXTURE WITH QUINOA MIXTURE

-PLACE IN FRIDGE AND SERVE COLD
