Mannie's Cold Zucchini Salad

2 ½ med. Size zucchini , sliced thinly , long ways

Canola oil

Minced garlic

Red wine vinegar

Fry zucchini lightly in hot oil till soft throughout. Transfer zucchini to bowl, salt lightly. Discard most of the oil in pan. Add generous amount of garlic and sauté lightly. Add ¼ C. red wine vinegar to pan, bring to a quick boil. Toss sauce w/ squash. Cover and refrigerate, serve in a few hours.
