Three Peppers Cabbage Slaw

From Moosewood Classics

Salad:

4 coups finely shredded green cabbage

½ red bell pepper : 1 inch matchstick size

½ green bell pepper: 1 inch matchstick size

½ orange /yellow pepper: cut into 1 inch matchstick size

½ C. scallions, finely sliced

3 T. chopped cilantro

Dressing:

2 t. lemon peel, freshly grated

2 T. fresh lemon juice

1 garlic clove, minced

2-3 T. vegetable oil

2 T. white balsamic vinegar

1 t. sugar

½ t. salt

Place salad ingredients in large bowl

In a separate bowl, whisk together remaining ingredients. Pour dressing on vegetables, and toss thoroughly. Add more vinegar, sugar, or salt to taste.

Optional: add hot sauce
